Delicious Banana Bread

You no longer need to throw away those old mushy bananas that you told yourself you would eat. This easy to follow banana bread recipe utilizes overripe bananas you may have around the kitchen or in your freezer. The riper the better! That means bananas that are spotted, brown, and even close to black. This ripeness adds to a deeper flavor and sweetness. The crumble topping adds a nice sugary crunch.

My friend has a nut allergy therefore I omitted the nuts. Usually I love adding walnuts or chocolates. Feel free to add either as this moist banana bread will still be delicious!

Tips: If you do not have buttermilk, you can substitute with 1/4 milk and 3/4 tsp of vinegar. Mix and let this stand for 10-15mins.

  • 2 cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1 tsp ground cinnamon

  • a dash of nutmeg

  • 1/2 cup unsalted butter , softened to room temperature

  • 1/2 cup brown sugar

  • 1/2 cup white sugar

  • 2 large eggs, at room temperature

  • 4 very ripe bananas , mashed with a fork or potato masher

  • 1/4 cup buttermilk (substitute with 1/4 milk and 3/4 tsp of vinegar. Mix and let this stand for 10-15mins.)

  • 1 tsp vanilla extract


  • 1/2 cup walnuts, chopped

  • 1/2 cup semi-sweet chocolate

Crumble Topping

  • 1/2 cup packed light or dark brown sugar

  • 1 tsp ground cinnamon

  • 3/4 cup all-purpose flour

  • 3/4 cup chopped walnuts

  • 1/3 cup unsalted butter, melted and slightly cooled


  1. Preheat oven to 350°F. Grease 3 mini loaf pans. I used 6⅛" x 3¾" disposable pans or 8" x 5" pan.

  2. Crumble topping. Melt and cool butter.

  3. Mix brown sugar, cinnamon, flour, and chopped walnuts in a bowl.

  4. Add slightly cooled butter into bowl and mix. Cover and place in fridge.

  5. Banana Mix. Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. in a bowl.

  6. On a stand mixer, cream together butter and sugar for 3-4 mins. until light and fluffy.

  7. Add one egg at a time on low speed until incorporated. Scrape bowl.

  8. Add mashed bananas, buttermilk and vanilla on low speed. Mix for 30 secs.

  9. Add dry ingredients on low speed. Scrape the bowl and mix until flour disappears but do not over mix.

  10. Add walnuts or chocolates if desired. You can also fold this in.

  11. Pour batter into 3 mini pans or a 8" x 5" loaf pan. Smooth the top with a small spatula.

  12. Add crumble topping and gently press down.

  13. Bake 55 to 75 minutes, or until a knife inserted into the center of the bread comes out clean. Transfer to wire rack to cool after 20 mins.
